just a glimpse of some of the "side work" that we waitresses do aside from the fun part of our jobs (serving the public!) there's so much behind the scenes stuff- from mopping floors and rolling silverware, to helping the cooks prep for dinner and washing the dishes! So, next time you don't see your server on the floor, don't assume she's out "coking and joking"...she's probably knee deep slicing lemons, chopping scallions/parsley or trying to keep up with the onslaught of dishes!
